I don't know how many followers cook/bake for someone on a gluten-free diet, but wanted to give you all a head's up to my next giveaway, which will launch at 12:01 AM, August 1st. That means it starts tonight just after midnight!

On Sunday we baked up our very first batch of coconut oil chocolate chip cookies (click for recipe), which just so happen to be gluten-free, soy-free, casein-free, and corn free (with our modifications... left out the vanilla extract and adding vanilla
powder in it's place and used Enjoy Life's soy-free, dairy-free Mega Chocolate Chunk pieces)! We left out the shredded coconut (didn't have any on hand). I will tell you that coconut has never been my favorite ingredient, but most people love it. I thought it was a texture thing, but it's just a coconut thing! lol I don't however mind the taste of coconut oil though and enjoy coconut milk in my smoothies.
My kids loved these cookies, especially with a glass of almond milk. This recipe doesn't use rice flour, which is another thing I'm not all that found of in a desert... makes things taste grainy. Coconut flour makes for a rich, dense, and very palatable cookie or brownie... I know because we've made both!
